Uma vez concluído o processo de fermentação, o café é lavado e classificado para separar P1, P2 e flotantes. O processo de secagem, que normalmente leva de 13 a 16 dias, dependendo das condições climáticas, continua até que o pergaminho atinja um teor de umidade de 12% nos leitos.
