The beans undergo a 120-hour anaerobic fermentation in cherry, infused with dehydrated passion fruit pulp to enhance their fruity complexity. Afterward, they are carefully dried in mechanical silos and stabilized in GrainPro bags, ensuring a consistent and vibrant flavor profile. To top it off, the beans are decaffeinated using the EA Sugarcane Process, which naturally removes caffeine while retaining the coffee’s intricate characteristics.

Brayan Alvear is a proud coffee grower from Acevedo, Huila. Growing up on a bustling coffee farm in San Adolfo, Brayan absorbed coffee knowledge from his father, sparking a lifelong passion. Today, alongside his family and a dedicated team, he partners with Forest and the Ancla processing facility to bring the finest coffees from Huila to the world.

Decaffeination Process

The EA Sugarcane Decaffeination uses ethyl acetate, a natural compound derived from Colombian sugarcane, to gently extract caffeine while preserving the coffee’s vibrant flavors. After removing caffeine, the beans are steamed to eliminate any trace of the compound, resulting in a clean and flavor-rich decaf coffee.
