HISTORY:
High up in the volcanic mountains of Huila, Colombia, Pink Bourbon has found its perfect home. A natural hybrid of Red and Yellow Bourbon, this variety has become a favorite among local farmers for its adaptability and standout flavor profile.

Edier Perdomo and Diego Horta, the farmers behind this lot, grow their Pink Bourbon with immense care on the farms of Los Pinos and La Primavera. Their passion for coffee is matched by their attention to detail—each tree is nurtured with intention, and each harvest is an expression of place, climate, and culture.

PROCESSING:
After harvesting only the ripest cherries, the coffee undergoes a 24-hour pre-fermentation in cherry, followed by 36 hours of anaerobic fermentation inside bags wrapped in mucilage blankets. This step helps intensify the sweet and floral notes while preserving clarity and structure.

The coffee is then dried slowly on raised beds for 15 days, locking in the vibrant complexity that defines this microlot. The result is a clean, juicy cup with refreshing acidity and a silky floral finish—an exceptional showcase of Colombian craftsmanship.
