Produced by Danilo Barbosa and certified by Rainforest Alliance, this microlot grows at 1105 meters of altitude and expresses the purity of 100% Arabica Catuaí Amarelo, elevated by a bold fermentation approach.

The Process: Anaerobic Co-fermentation with IPA Yeast

This coffee undergoes a carefully controlled anaerobic fermentation, co-fermented with IPA beer yeast for 36 hours. This innovative method intensifies fruity aromas, adds vibrant tropical layers and brings a subtle hop-like citrus character that sets this lot apart.
