Born from the creative minds at El Vergel Estate in Tolima, Colombia, this co-fermented natural is the result of years of innovation, community, and an obsession with pushing the boundaries of what coffee can taste like. Crafted from Castillo and Colombia varietals sourced from a network of 250 coffee-growing families across Tolima, Huila, and Caldas, this is a coffee that carries the spirit of an entire region in every sip.

The result in the cup is bold, expressive, and unforgettable. Expect an intense wave of ripe cherry and ginja, layered with dark chocolate richness, warm spices, and a sweetness that lingers long after the last drop. This is specialty coffee at its most adventurous — and most delicious.

Process Information

The journey of Cherry Bomb begins with the careful handpicking of Castillo and Colombia coffee cherries from farms across Tolima, Huila, and Caldas. Once selected, the cherries are transported to El Vergel Estate, where they undergo rigorous hand-sorting to ensure optimal ripeness and freshness. The coffee then enters a 48-hour anaerobic pre-fermentation in sealed plastic bags, activating enzymatic reactions that lay the foundation for structured flavor development.

Following pre-fermentation, the coffee moves into a co-fermentation stage with yeasts and red cherry flavors, intentionally designed to amplify its fruit-forward profile. Sugarcane is added to increase available sugar content, extending the fermentation to five days for greater depth and complexity. Once complete, the coffee is pre-dried under direct sunlight on raised beds before transferring to static mechanical silos for controlled drying. A final 30-day stabilization period allows the flavors to fully harmonize and mature before export.
