After we started roasting coffee I had a goal. To have our coffee in the selection for the Portuguese Aeropress Championship. I´ve bought this coffee in February 2024 and it was delayed until the week before the tryouts for the coffees! We just sample roasted it, shipped it and hopped it was a good experience for the judges.

Never in our wildest dreams we would think that we could win this one! As a new roaster this is a great opportunity and an honor, to be selected among such great roasters that inspired me with their work to get where we wanted with coffee!

It helped a lot that we used this amazing Geisha from Leon Christianakis! So much sweetness from waffles, floral notes from orange and peach flavors comes around your mouth with a smooth lingering finish that only a high quality beans can offer!

ABOUT THE PROCESS

The cherry sorting process begins in the field and continues at the washing station, where de-pulping is carried out in the evening. The coffee is then subjected to an open fermentation process for a period of 12 to 13 hours. During this time, the coffee is regularly checked to monitor the level of fermentation. Once the fermentation process is complete, the coffee is washed and graded to separate P1, P2, and floaters. The drying process, which typically takes 13 to 16 days depending on weather conditions, continues until the parchment reaches a moisture content of 12% on the beds. The dried parchment is then transferred to a dry storage area.
