About the Coffee:
Meet our exceptional coffee produced by Diego Bermudez from the lush highlands of Colombia, specifically from Finca El Paraíso, where the ideal growing conditions allow for the cultivation of exquisite coffee. Situated at a stunning altitude of 1960 meters, the Geisha variety is renowned for its delicate and complex flavor profile, offering a sensational experience.
The process behind this innovative coffee involves harnessing a groundbreaking method that achieves near-zero fermentation, resulting in a taste profile that is unlike any coffee you’ve ever encountered, yet captures the quintessential essence of what coffee should be. Zeo represents the latest advancements from a talented team that is reshaping the world of coffee processing.
The journey begins with the careful cultivation of superior geisha seedlings, followed by the hand-picking of cherries at the peak of ripeness. What sets this process apart is the unique treatment the cherries undergo: they are immersed in an ozone bath to eliminate impurities, then rapidly frozen at a chilling -40°C within four hours. Subsequently, these cherries transition to a vacuum drying chamber, where zeolites, known for their high absorption rates, metabolize the cherries while maintaining their natural structure, vibrant color, and exquisite flavor.
The result of this revolutionary process is a no-fermentation coffee that remains untouched by heat, preserving the dehydrated pulp to keep the richness of the fruit intact. In less than ten hours post-harvest, you are presented with the authentic essence of geisha, offering a delicate light body, progressive stone fruit acidity, and a round sweetness complemented by enchanting notes of jasmine, lemongrass, apricot, and litchi.
