About the Coffee
From the lush mountains of Acevedo in Huila, Colombia, Gesha Zest showcases the unparalleled potential of the Gesha variety. This coffee offers a vibrant and complex cup with tasting notes of sweet aromatics, floral accents, citric acid, green tea, lemongrass and orange. Its brightness and delicate profile are perfect for those who appreciate refined, innovative coffees.

The Process
The journey of Gesha Zest begins with meticulous care. The cherries are hand-sorted, floated, and depulped before entering a 140-hour anaerobic fermentation in GrainPro bags with their mucilage intact. This step enhances the coffee’s floral and citric character.
Next, a second fermentation in plastic tanks lasts for two days, followed by an 18-day drying period under the sun. During this drying stage, tangerine peel is added to the parchment, infusing the beans with a zesty citrus twist. After drying, the coffee is stabilized in GrainPro bags for 25 days to allow the flavors to develop fully.

Wilder Lazo began his coffee journey in 2017, working alongside his father in the San Adolfo mountains. Driven by passion and curiosity, Wilder established a varietal program that now features over a dozen unique coffee varieties. His innovative approach and deep respect for his craft shine through in every cup of Gesha Zest.
